Instructions
- Prepare the vegetables: In a large bowl, toss the thinly sliced cucumbers and red onion to combine them evenly.
- Make the dressing: In a medium bowl, whisk together the plain Greek yogurt, fresh lemon juice, and finely chopped fresh dill until the mixture is smooth and well blended. Season with kosher salt and freshly ground black pepper to taste.
- Toss and serve: Pour the prepared yogurt dressing over the cucumber and onion mixture. Toss gently to coat all the vegetables evenly with the dressing. Top with additional fresh dill for garnish before serving.

- For a crisper texture, soak cucumber slices in ice water for 15 minutes before draining and assembling the salad.
