Ingredients
Scale
Chicken Rolls
- 6 skinless boneless chicken breasts
- Salt and freshly ground black pepper, to taste
- 3/4 teaspoon dried thyme
- 6 slices deli ham
- 6 slices Swiss cheese
- 1/4 cup melted butter
- 2/3 cup panko breadcrumbs
Yogurt Sauce
- 1/2 cup Greek yogurt
- 1 teaspoon lemon juice
- Dijon mustard, to taste
- Fresh parsley, chopped, for garnish
Instructions
- Prepare chicken: Preheat your oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish. Place each chicken breast between two layers of plastic wrap and pound them with a meat mallet or rolling pin until about 1/4 inch thick. Season both sides of the chicken breasts with salt, freshly ground black pepper, and dried thyme.
- Roll chicken: Lay a slice of deli ham on each flattened chicken breast, then top with a slice of Swiss cheese. Carefully roll the chicken tightly around the ham and cheese, securing each roll with a toothpick if needed to keep it intact during cooking.
- Bread and bake: Dip each chicken roll into the melted butter, coating evenly. Then roll them in the panko breadcrumbs until fully covered. Place the rolls seam-side down in the prepared baking dish. Bake in the preheated oven for approximately 40 minutes, or until the chicken is cooked through and the breadcrumb coating turns golden and crispy.
- Prepare yogurt sauce: While the chicken bakes, mix together the Greek yogurt and lemon juice in a small bowl. Add Dijon mustard to taste, stirring well until the sauce is smooth and tangy.
- Garnish and serve: Once the chicken rolls are done baking, remove toothpicks and drizzle the yogurt sauce generously over the hot rolls. Garnish with freshly chopped parsley for a burst of color and freshness before serving.
Notes
- To ensure the chicken cooks evenly, pounding it to an even thickness is key.
- Use fresh panko breadcrumbs for the best crispy texture.
- If you prefer a dairy-free option, substitute Swiss cheese with a non-dairy cheese alternative and use a different sauce.
- Let the chicken rest a few minutes after baking to retain juices.
- You can prepare the chicken rolls and bread them ahead of time; refrigerate until ready to bake.
