Instructions
- Prepare Dry Ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, light brown sugar, kosher salt, and ground cinnamon until they are well combined and evenly mixed.
- Mix Wet Ingredients: In a separate bowl, whisk together the whole milk and sour cream until smooth. Then add the eggs one at a time, whisking thoroughly after each addition. Stir in the pure vanilla extract to complete the wet mixture.
- Combine Wet and Dry: Pour the wet ingredients into the bowl with the dry ingredients, and gently stir with a wooden spoon until just combined. Be careful not to overmix; the batter should still be slightly lumpy.
- Cook Pancakes: Heat a large nonstick skillet over medium heat and melt the butter until it is foamy. Reduce the heat to medium-low, then ladle the pancake batter into the skillet, making pancakes about 4-5 inches in diameter. Cook until bubbles begin to form on the surface and the underside turns golden brown, about 3 minutes. Flip the pancakes and cook the other side for another 3 minutes until golden and cooked through.
- Coat Pancakes: Immediately after cooking each pancake, toss it in cinnamon-sugar to coat the surface well, mimicking the classic churro flavor and texture.
- Repeat & Serve: Continue cooking the remaining batter following the same method. Serve the churro pancakes hot with the melted chocolate drizzled over the top or served on the side for dipping.

- Use a nonstick skillet to prevent sticking and achieve a golden-brown crust easily.
