Chocolate Swirl
- 2 ounces (55g) semi-sweet chocolate, finely chopped
Meringue
- 3 large egg whites (120g), at room temperature
- 1/4 teaspoon cream of tartar
- 1/8 teaspoon salt
- 2/3 cup (130g) granulated sugar
- Optional: sprinkles for topping
Instructions
- Preheat and prepare baking sheets. Preheat your oven to 250°F (121°C). Line two large baking sheets with parchment paper or silicone baking mats and set aside for later use.
- Melt the chocolate. Using a double boiler or microwave, melt the finely chopped semi-sweet chocolate until smooth. If microwaving, heat in 20-second increments stirring between each until completely melted. Set the melted chocolate aside to cool.
- Whip the egg whites. In a completely clean, residue-free large glass or metal bowl, use a handheld or stand mixer with a whisk attachment to beat the egg whites, cream of tartar, and salt on high speed until soft peaks form, about 2 minutes.
- Add sugar and beat to stiff peaks. With the mixer still running on high, slowly add the granulated sugar and continue beating until stiff, glossy peaks form, approximately 2 additional minutes. Be careful not to overbeat.
- Fold in melted chocolate. Gently fold the cooled melted chocolate into the stiff egg whites to create beautiful chocolate swirls without fully incorporating it. You can reserve some melted chocolate for drizzling into the piping bag.
- Prepare piping bag and fill. Fit a piping bag with an open star tip (like Wilton 1M). Optionally, drizzle leftover chocolate inside the bag. Spoon about half of the meringue batter into the piping bag, as it won’t all fit at once.
- Pipe swirls onto baking sheets. Pipe 1.5-inch swirls of meringue about 1-2 inches apart on the prepared baking sheets. Top each swirl with sprinkles if desired. Repeat with remaining batter.
- Bake the meringues. Bake both sheets simultaneously in the preheated oven for 1.5 hours. Do not open the oven door during baking to prevent deflation.
- Cool inside oven. After 1.5 hours, turn off the oven but leave the meringues inside to cool gradually for 30 minutes or until the oven reaches room temperature. This helps them dry out perfectly.
- Remove and cool on wire racks. Take the meringues out of the oven and let them cool completely on the baking sheets. Once cool, use a flat spatula to carefully lift them off.
- Store properly. Store the cooled meringue cookies in an airtight container at room temperature for up to 2 weeks, keeping them crisp and fresh.
