  • Author: lilan
  • Total Time: 50 minutes
  • Yield: 8 servings 1x

Description

This Chocolate Cobbler is a rich and indulgent dessert featuring a moist chocolate batter baked under a crisp cocoa topping, all enhanced by a hot coffee soak to intensify the chocolate flavors. Served warm with creamy vanilla ice cream, it’s a perfect comforting treat for chocolate lovers.

Ingredients

Scale

For the Batter

  • 1/2 cup butter
  • 1 ½ cups all-purpose flour
  • 2 ¼ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup packed light brown sugar
  • ½ cup granulated sugar
  • 2 tablespoons unsweetened cocoa powder
  • 1 cup semisweet chocolate chips
  • ¾ cup whole milk
  • 1 tablespoon vanilla extract

For the Topping

  • ½ cup unsweetened cocoa powder
  • ½ cup granulated sugar
  • ¼ cup packed light brown sugar

Other

  • 2 ¼ cups hot coffee or boiling water
  • Vanilla ice cream, for serving

Instructions

  1. Preheat and prepare butter: Preheat your oven to 350°F (175°C). Chop the butter into pieces and place them in a 9×13-inch baking dish as the oven heats, allowing the butter to melt completely without burning. Once melted, remove the dish from the oven.
  2. Make the batter: In a medium bowl, combine the flour, baking powder, salt, ½ cup brown sugar, ½ cup granulated sugar, 2 tablespoons cocoa powder, and semisweet chocolate chips. Stir thoroughly, then add the milk and vanilla extract, mixing until combined into a thick batter. Spread the batter evenly over the melted butter in the baking dish.
  3. Prepare the topping: In a small bowl, mix together ½ cup cocoa powder, ½ cup granulated sugar, and ¼ cup brown sugar. Evenly sprinkle this topping over the batter in the dish, making sure not to stir it in.
  4. Add hot liquid: Slowly pour the hot coffee or boiling water over the topping layer, taking care not to stir. This will create the distinctive cobbler effect as the batter rises.
  5. Bake the cobbler: Place the dish in the oven and bake for 30 to 35 minutes. The top should look crisp and set when done. After baking, allow the cobbler to cool for a few minutes before serving.
  6. Serve: Scoop the warm chocolate cobbler into bowls and top each serving with a scoop of vanilla ice cream for a delightful contrast of warm and cold, creamy and rich flavors.

Notes

  • Make sure the butter is fully melted but not browned or burnt before adding the batter for optimal flavor and texture.
  • Pour the hot coffee or water slowly and gently over the topping to maintain the distinct layers and achieve the signature cobbler look.
  • For stronger chocolate flavor, use dark roast coffee when brewing the hot coffee.
  • This dessert is best enjoyed warm, ideally served with vanilla ice cream, but leftovers can be reheated gently.
  • To make it gluten-free, substitute the all-purpose flour with a gluten-free baking blend.
