Instructions
- Preheat and prepare butter: Preheat your oven to 350°F (175°C). Chop the butter into pieces and place them in a 9×13-inch baking dish as the oven heats, allowing the butter to melt completely without burning. Once melted, remove the dish from the oven.
- Make the batter: In a medium bowl, combine the flour, baking powder, salt, ½ cup brown sugar, ½ cup granulated sugar, 2 tablespoons cocoa powder, and semisweet chocolate chips. Stir thoroughly, then add the milk and vanilla extract, mixing until combined into a thick batter. Spread the batter evenly over the melted butter in the baking dish.
- Prepare the topping: In a small bowl, mix together ½ cup cocoa powder, ½ cup granulated sugar, and ¼ cup brown sugar. Evenly sprinkle this topping over the batter in the dish, making sure not to stir it in.
- Add hot liquid: Slowly pour the hot coffee or boiling water over the topping layer, taking care not to stir. This will create the distinctive cobbler effect as the batter rises.
- Bake the cobbler: Place the dish in the oven and bake for 30 to 35 minutes. The top should look crisp and set when done. After baking, allow the cobbler to cool for a few minutes before serving.
