Chocoflan (Mexican Flan and Cake Hybrid) Recipe

Introduction

Chocoflan, also known as “impossible cake,” is a delightful dessert combining rich chocolate cake with creamy flan topped with luscious caramel. This elegant treat is perfect for special occasions or whenever you want to impress with a unique, layered dessert.

A bundt cake with two clear layers sits on a white plate over a white marbled surface; the bottom layer is dark brown, moist, and dense with a textured appearance, while the top layer is smooth, creamy, and light yellow with a glossy caramel sauce dripping over the rounded ridges, pooling slightly at the base; one large slice is cut and slightly pulled out, showing the contrast between the layers and some crumbs on the plate. photo taken with an iphone --ar 4:5 --v 7

Ingredients

  • Cake:
    • 1/2 cup (1 stick) plus 2 tbsp. unsalted butter, softened
    • 1/4 cup homemade or store-bought caramel sauce
    • 1 cup (215 g) lightly packed dark brown sugar
    • 1 large egg, room temperature
    • 1 1/2 cups (180 g) all-purpose flour
    • 1/4 cup unsweetened Dutch-processed cocoa powder
    • 1 tsp baking powder
    • 3/4 tsp baking soda
    • 1/2 tsp kosher salt
    • 1/2 cup (120 ml) brewed coffee or water, room temperature
    • 1/2 cup (120 ml) buttermilk, room temperature
  • Flan:
    • 5 large eggs
    • 1 (14-oz.) can sweetened condensed milk
    • 2 tsp pure vanilla extract
    • 1 cup (235 ml) whole milk or half-and-half

Instructions

  1. Step 1: Arrange a rack in the middle of the oven and preheat to 350ºF. Grease a 10- to 12-cup Bundt pan with 2 tablespoons of butter, making sure to cover all crevices. Pour the caramel sauce into the bottom of the pan and set aside.
  2. Step 2: In a large bowl, use a stand mixer with a whisk attachment or a hand mixer to beat the brown sugar and remaining 1/2 cup butter on medium-high speed until light and fluffy, about 3 to 5 minutes. Beat in the egg until combined.
  3. Step 3: In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Add half of the dry ingredients to the egg mixture, beating until just combined. Pour in the coffee and beat until incorporated. Add the remaining dry ingredients and buttermilk, beating until just combined. Pour this batter over the caramel in the prepared pan.
  4. Step 4: In a large bowl, whisk the eggs, sweetened condensed milk, and vanilla until smooth. Add the whole milk or half-and-half and whisk until incorporated. Slowly pour the flan mixture over the back of a large spoon onto the cake batter in the Bundt pan. This helps minimize disturbing the cake layer.
  5. Step 5: Tightly cover the pan with foil and place it in a large roasting pan. Carefully transfer to the oven, then pour in boiling water into the roasting pan until it reaches halfway up the sides of the Bundt pan (about 3 cups). Add more warm water if needed.
  6. Step 6: Bake for 60 to 70 minutes, or until a tester inserted into the center comes out mostly clean (a few crumbs are fine). Remove the Bundt pan from the water bath and uncover. Let cool for 1 hour, then refrigerate for at least 2 hours before serving. If refrigerating longer than 2 hours, cover loosely with foil.
  7. Step 7: To unmold, loosen the cake by placing the Bundt pan in a large bowl of hot water for a few seconds. Place a platter upside down on the pan, then carefully flip it to release the cake. Spoon remaining caramel from the pan over the top before serving.

Tips & Variations

  • Use brewed coffee instead of water in the cake batter to enhance the chocolate flavor.
  • For a richer flan, substitute half-and-half for the whole milk.
  • To avoid disturbing the layers, always pour the flan mixture slowly over the back of a spoon.
  • If you prefer a less sweet caramel, make your own caramel sauce with less sugar.

Storage

Store chocoflan covered in an airtight container in the refrigerator for up to 3 days. Reheat individual slices briefly in the microwave if desired, though it is often best served chilled.

How to Serve

A close-up of a slice of dessert held on a silver fork, showing two layers: the bottom layer is dark brown, moist, and crumbly chocolate cake, and the top layer is smooth, light yellow cream. A thick golden caramel sauce is being poured from above, dripping down the cream and cake, with some sauce dripping off the fork's edge. The background is a white marbled texture. photo taken with an iphone --ar 4:5 --v 7

FAQs

Why does the cake layer end up on top?

This is a signature of chocoflan. During baking, the heavier flan layer sinks to the bottom while the lighter cake batter rises to the top, creating the “impossible” layered effect.

Can I make chocoflan in a different pan?

Yes, but a Bundt pan works best for even cooking and easy unmolding. If using a different pan, adjust baking time accordingly and ensure it holds enough batter and flan mixture.

Ingredients

Scale

Cake

  • 1/2 cup (1 stick) plus 2 tbsp. unsalted butter, softened
  • 1/4 cup homemade or store-bought caramel sauce
  • 1 cup (215 g) lightly packed dark brown sugar
  • 1 large egg, room temperature
  • 1 1/2 cups (180 g) all-purpose flour
  • 1/4 cup unsweetened Dutch-processed cocoa powder
  • 1 tsp. baking powder
  • 3/4 tsp. baking soda
  • 1/2 tsp. kosher salt
  • 1/2 cup (120 ml) brewed coffee or water, room temperature
  • 1/2 cup (120 ml) buttermilk, room temperature

Flan

  • 5 large eggs
  • 1 (14-oz.) can sweetened condensed milk
  • 2 tsp. pure vanilla extract
  • 1 cup (235 ml) whole milk or half-and-half

Instructions

  1. Prepare Pan and Caramel: Arrange an oven rack in the middle position and preheat the oven to 350ºF. Grease a 10- to 12-cup Bundt pan thoroughly with 2 tablespoons softened butter, making sure to cover all crevices. Pour the caramel sauce into the bottom of the pan and set aside.
  2. Make the Cake Batter: Using a stand mixer fitted with the whisk attachment or a hand mixer in a large bowl, beat 1/2 cup butter and the brown sugar on medium-high speed until the mixture is light and fluffy, about 3 to 5 minutes. Add the egg and beat until fully combined.
  3. Combine Dry Ingredients: In a separate medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and kosher salt. Add half of these dry ingredients to the butter and sugar mixture and beat until just combined. Pour in the brewed coffee and beat to incorporate. Then add the remaining dry ingredients along with the buttermilk and beat until just combined, being careful not to overmix.
  4. Assemble Cake Layer: Pour the chocolate cake batter carefully over the caramel sauce in the Bundt pan.
  5. Prepare Flan Mixture: In a large bowl, whisk together the eggs, sweetened condensed milk, and vanilla extract until smooth and combined. Add the whole milk or half-and-half and whisk just until incorporated; some bubbles are fine.
  6. Pour Flan Over Cake: Slowly pour the flan mixture over the back of a large spoon into the Bundt pan on top of the cake batter. This technique helps prevent disturbing the cake layer below.
  7. Set Up Water Bath: Tightly cover the Bundt pan with aluminum foil and place it inside a large roasting pan. Carefully pour boiling water into the roasting pan until it reaches about halfway up the sides of the Bundt pan. Add more warm water if needed to maintain water level.
  8. Bake the Chocoflan: Bake in the preheated oven for 60 to 70 minutes, or until a tester inserted into the cake layer comes out mostly clean (a few crumbs are okay, as the flan sets further when cooling).
  9. Cool and Refrigerate: Remove the Bundt pan from the water bath and transfer it to a wire rack. Uncover and let cool for 1 hour, then refrigerate the chocoflan for at least 2 hours to fully set. If refrigerating longer, cover with foil.
  10. Unmold and Serve: To unmold, loosen the edges by placing the Bundt pan in a large bowl of hot water for a few seconds. Place an inverted platter on top of the Bundt pan and carefully flip to release the chocoflan. Spoon any remaining caramel sauce from the bottom of the pan over the top of the dessert before slicing and serving.
  11. Make Ahead Tip: Chocoflan can be made up to 3 days in advance. Store it in an airtight container in the refrigerator to maintain freshness.

Notes

  • Ensure all ingredients are at room temperature for best mixing results.
  • Pouring the flan mixture slowly over a spoon reduces mixing the layers together, keeping the distinct cake and flan layers.
  • Use a water bath (bain-marie) to gently bake the flan layer and prevent cracking or curdling.
  • Loosening the pan in hot water helps unmold the dessert cleanly.
  • Can be refrigerated up to 3 days in an airtight container.
