Description

This Chinese Vegetable Soup is a light, flavorful, and comforting dish packed with fresh vegetables simmered in a savory broth. The addition of soy sauce and sesame oil adds a subtle Asian flair, making it both nourishing and delicious.

Ingredients

Scale

Broth and Seasoning

  • 4 cups low-sodium vegetable broth
  • 1 1/2 tablespoons soy sauce (plus more to taste)
  • Salt and freshly ground black pepper to taste
  • 1 1/4 teaspoons sesame oil

Vegetables and Aromatics

  • 3 cloves garlic (minced)
  • 1 inch fresh ginger (chopped)
  • 1 medium carrot (sliced)
  • 3/4 cup mushrooms (sliced)
  • 1/2 cup celery (small-diced)
  • 1 head bok choy (sliced)
  • 2 sprigs cilantro (chopped)
  • 1 green onion (sliced)

Instructions

  1. Boil broth
Bring 4 cups of low-sodium vegetable broth to a boil over medium-high heat in a large pot.
  2. Simmer vegetables
Reduce the heat to medium-low. Add minced garlic, chopped ginger, sliced carrots, mushrooms, diced celery, and sliced bok choy to the broth. Let the soup simmer gently for 6-8 minutes, or until the bok choy is tender and the vegetables are cooked through.
  3. Season soup
Stir in 1 1/2 tablespoons soy sauce and season with salt and freshly ground black pepper to taste. Drizzle 1 1/4 teaspoons of sesame oil over the soup to enhance the flavor. Finally, garnish with chopped cilantro and sliced green onion for freshness.
  4. Serve
Divide the hot soup into bowls and serve immediately. Enjoy your warm and tasty Chinese vegetable soup!
