Description

Tiropita is a traditional Greek savory pastry made with layers of crispy phyllo dough filled with a rich and creamy mixture of feta, cottage, and cream cheeses blended with eggs. Cheese Filling

  • 4 large eggs
  • 1/2 pound feta cheese, crumbled

Phyllo Pastry

  • 1/2 pound phyllo dough, thawed
  • 3/4 cup unsalted butter, melted (for brushing dough)

Instructions

  1. Mix filling: In a medium bowl, whisk the eggs until light and frothy. In a separate larger bowl, combine the crumbled feta cheese, small curd cottage cheese, cream cheese, kosher salt, and black pepper. Gradually whisk in the eggs until the mixture is well blended and smooth.
  2. Layer phyllo: Lay one sheet of phyllo dough horizontally on a clean work surface. Brush it generously with melted butter, then place another sheet of phyllo dough on top and brush again with butter to keep the layers moist and flaky.
  3. Cut strips: Using a sharp knife or pastry cutter, vertically cut the layered phyllo dough into 6 even strips, which will be used to form the triangular pastries.
  4. Fold triangles: Place a spoonful of the cheese filling at one end of each phyllo strip. Fold the dough over to form a triangle, then continue folding the strip in a triangular pattern until you reach the end of the strip. Brush the outside of each triangle with melted butter to ensure a golden finish after baking. Repeat this process with remaining strips and filling.
  5. Bake: Preheat your oven to 350°F (175°C). Arrange the tiropita triangles on a baking sheet lined with parchment paper for easy cleanup and even baking. Bake the pastries for 13 minutes or until they turn golden brown and crisp on the outside. Remove from oven and let cool briefly before serving.
