Dressing

  • 2/3 cup canned coconut milk
  • 2 tsp chopped fresh cilantro
  • 1/4 cup neutral oil (such as vegetable or canola oil)
  • Reserved seasoning paste from salmon marinade
  • 2 tsp fresh lime juice (remaining from the 2 tbsp plus 2 tsp)

Salad

  • 2 large heads of romaine lettuce, chopped
  • 1 mango, peeled and finely chopped
  • 1 large red bell pepper, seeded and finely chopped
  • 1 avocado, sliced
  • 4 scallions, sliced
  • 1 cup chopped purple cabbage
  • 1 cup plantain chips
  • 3/4 cup cotija cheese, crumbled or grated
  • 2 tbsp neutral oil (for cooking salmon)

Instructions

  1. Prepare the Seasoning Paste and Marinate Salmon: In a small bowl, combine light brown sugar, reduced-sodium soy sauce, onion powder, garlic powder, cayenne pepper, dried thyme, ground ginger, ground allspice, and 4 teaspoons of fresh lime juice to form a thick paste. Generously season each salmon fillet with kosher salt and freshly ground black pepper, rub them with 2 tablespoons of the seasoning paste, and let them rest for 10 minutes. Keep the remaining seasoning paste for the dressing.
  2. Make the Coconut-Lime Dressing: In another bowl, whisk together canned coconut milk, chopped fresh cilantro, 1/4 cup neutral oil, the remaining 2 teaspoons of lime juice, and the reserved seasoning paste until smooth. Set this flavorful dressing aside for serving.
  3. Cook the Salmon: Heat the remaining 2 tablespoons of neutral oil in a large skillet over medium-high heat. Cook the salmon fillets for 2 to 3 minutes on each side until the flesh flakes easily with a fork and the marinade blackens slightly, enhancing the flavor and texture. Once cooked, transfer the salmon to a plate and keep warm.
  4. Assemble the Salad: On a large platter or individual plates, spread out chopped romaine lettuce and season it lightly with kosher salt. Arrange rows or small piles of finely chopped mango, red bell pepper, sliced avocado, scallions, chopped purple cabbage, and plantain chips over the lettuce. Sprinkle the top with crumbled cotija cheese and place the cooked salmon fillets on the salad.
