Instructions

  1. Cook Bacon: Place the bacon slices in a cold, large skillet and turn the heat to medium-low. Cook for about 10 minutes, turning every couple of minutes, until the bacon is crispy. Drain the cooked bacon on paper towels, leaving the bacon grease in the pan.
  2. Prepare Salad Base: While the bacon cooks, assemble microgreens, halved cherry tomatoes, and sliced avocado in a serving bowl. Drizzle the mixture with basil pesto to add flavorful depth.
  3. Chop Bacon: Once the bacon is cooked and cooled slightly, chop or crumble it into bite-sized pieces and set aside for garnish.
  4. Cook Eggs: With the skillet still hot over medium-low heat and bacon grease present, crack the eggs into the pan. Cook for 2-3 minutes for sunny side up or adjust cooking time based on your preference (you may cover the pan or flip eggs for over-easy). Season with sea salt and black pepper to taste.
  5. Assemble and Serve: Slide the cooked eggs over the salad greens. Sprinkle with the chopped bacon. Optionally, serve with lemon wedges, extra pesto, and fresh basil for a bright, aromatic finish.
