Description

These Baked Blueberry Fritter Bites are mini muffin-sized treats filled with fresh blueberries and Greek yogurt for a moist texture. They feature a lightly sweetened batter with a touch of vanilla and are topped with a shiny blueberry glaze that caramelizes under the broiler for a crispy, flavorful finish. Perfect as a snack or a delightful breakfast bite, these fritters are easy to make and bake in under 30 minutes.

Ingredients

Scale

Dry Ingredients

  • 11/2 cups all-purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt

Wet Ingredients

  • 6 tablespoons unsalted butter, melted and slightly cooled
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 (5.3 ounce) containers blueberry Greek yogurt

Fruit

  • 1 cup fresh or frozen blueberries

Glaze

  • 2 cups powdered sugar
  • 1/3 cup milk
  • 2 teaspoons blueberry jam or mashed fresh blueberries

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C). Lightly grease a 24-cup mini muffin pan using non-stick cooking spray to ensure easy removal of the fritters.
  2. Mix dry ingredients: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until evenly combined.
  3. Combine wet ingredients: In a separate small bowl, whisk together melted butter, egg, vanilla extract, and blueberry Greek yogurt until smooth. Pour this mixture into the dry ingredients and stir gently until just combined. Then carefully fold in the fresh or frozen blueberries, being careful not to overmix to keep the fritters tender.
  4. Fill muffin cups and bake: Evenly scoop the batter into the prepared mini muffin cups, filling each almost to the top. Bake in the preheated oven for about 15 minutes or until the fritters begin to turn light golden brown on top.
  5. Prepare for broiling: Remove the baked fritters from the oven and switch the oven to the broiler setting on high. Line a baking sheet with parchment paper and transfer the fritters onto this sheet for glazing and browning.
  6. Make the glaze: In a small bowl, whisk together powdered sugar, milk, and blueberry jam (or mashed blueberries) until you have a smooth glaze with no lumps.
  7. Glaze and broil fritters: Dip each fritter top-first into the blueberry glaze, letting the excess drip back into the bowl. Place them upright on the baking sheet so the glaze drips down the sides. Place the baking sheet under the broiler, broiling for about 3-4 minutes until the glaze caramelizes and crisps lightly on top. Rotate the sheet every minute for even browning, watching carefully to prevent burning.
  8. Final glazing and cooling: Once the fritters show brown spots and caramelized glaze, remove them from the oven. Brush any remaining glaze over the tops and let them set and cool for about 15 minutes before serving.

Notes

  • Use fresh or frozen blueberries depending on availability, but do not thaw frozen blueberries excessively to avoid a soggy batter.
  • Watch the fritters closely during broiling to prevent burning; broilers vary in intensity.
  • For a dairy-free option, substitute the butter, yogurt, and milk with plant-based alternatives.
  • The glaze can be adjusted for thickness by adding more milk to thin or more powdered sugar to thicken.
  • These fritter bites store well in an airtight container for up to 2 days; reheat lightly before serving.
