- 1 small head green cabbage, finely shredded (about 6–7 cups packed)
- 2 Granny Smith apples, cored and julienned
- 1 large carrot, shredded
- 1/4 cup dried cranberries
- 1/4 cup golden raisins
Dressing Ingredients
- 1/4 cup lemon juice
- 2 1/2 tablespoons apple cider vinegar
- 1/4 cup olive oil
- 4 1/2 tablespoons honey
- Kosher salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Combine ingredients: In a large bowl, place the finely shredded cabbage, julienned apples, and shredded carrot. Add the dried cranberries and golden raisins, and gently mix everything together until evenly distributed.
- Whisk dressing: In a small bowl, whisk together the lemon juice, apple cider vinegar, olive oil, honey, kosher salt, and freshly ground black pepper until the dressing is smooth and well combined. Taste and adjust the balance of acidity and sweetness by adding more lemon juice or honey as desired.
- Toss and chill: Pour the prepared dressing over the cabbage mixture and toss thoroughly to ensure all ingredients are evenly coated. Cover and refrigerate the slaw for at least 15 minutes to allow the flavors to meld before serving.
