  • 7 pitted green olives
  • 14 baby carrots
  • Tortilla chips, veggies, or pita chips, for serving

Instructions

  1. Step 1: Preheat the oven to 400°F. Line a baking sheet with parchment paper. Brush each tortilla lightly with canola oil and sprinkle with salt. Using a sharp knife, carefully cut a 2-dimensional field goal shape into each tortilla and place them on the prepared baking sheet.
  2. Step 2: Bake tortillas for 6 to 7 minutes until they are golden brown and crisp. Transfer them to paper towels to cool.
  3. Step 3: In a medium bowl, combine the refried beans and adobo seasoning thoroughly. Spread the bean mixture evenly in the bottom of a 13″-by-9″ baking dish. In the same bowl, mix 2 cups of sour cream with 1/2 teaspoon salt and a pinch of black pepper. Spread this sour cream mixture over the beans in an even layer.
  4. Step 4: Strain any excess liquid from the pico de gallo using a fine-mesh strainer. Starting at the shorter left edge of the baking dish, layer the pico de gallo over the sour cream, leaving a 2-inch strip of sour cream exposed on the right edge.
  5. Step 5: From the shorter right edge, spread the queso over the exposed sour cream and part of the pico de gallo, leaving a 2-inch area of pico de gallo visible on the left edge. This will form one end zone. Sprinkle scallions over the queso layer, leaving a 2-inch section of queso exposed to create the second end zone. Spread guacamole evenly over the scallions to create the “field.” Squeeze lime juice over the guacamole.
  6. Step 6: Place the remaining 1/4 cup sour cream into a piping bag fitted with a small tip. Pipe a single line across the center of the guacamole parallel to the short edges of the dish. Pipe two evenly spaced lines on each side of this center line to create five goal lines total. At the base of the center line, pipe the number “5” to the left and “0” to the right. Repeat on the other side. Place a tortilla field goal at each end of the dip to complete the football field look.
  7. Step 7: Attach one olive to the end of each baby carrot to resemble a football helmet. Insert these “helmets” into the dip with the olive end facing up. Serve with tortilla chips, veggies, or pita chips alongside.
