  • Crispy fried shallots (optional), available at the supermarket or Asian grocery stores

Instructions

  1. Step 1: Rinse the lentils by placing them in a fine-mesh sieve and running water over them until the water runs clear.
  2. Step 2: Heat the coconut oil in a deep, heavy-based frying pan over medium heat. Add the finely diced onion and cook for 2–3 minutes until softened.
  3. Step 3: Add the chopped garlic and ginger to the pan and cook for another 1 minute until fragrant.

  5. Step 5: Bring the mixture to a simmer and cook for about 20 minutes, stirring occasionally, until the lentils are tender and cooked through.
  6. Step 6: Add the baby spinach leaves and stir them in until just wilted. Remove the pan from the heat.
  7. Step 7: Serve the dal with a swirl of plain yoghurt, freshly chopped coriander, crispy fried shallots if using, flaky roti bread on the side, and a squeeze of fresh lemon juice.

Tips & Variations

  • For a richer flavor, toast the spices in the oil for a minute before adding the onion.
  • Substitute garam masala with curry powder if preferred for a slightly different spice profile.
  • Add a chopped chili for extra heat, or use spinach alternatives like kale or mustard greens.
  • Roti bread can be warmed in a dry pan or oven for a soft and flaky accompaniment.

Storage

Store any leftover dal in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave, adding a splash of water or stock to loosen the texture if it thickens.

  • Plain yoghurt, to serve
  • ¼ bunch coriander (cilantro), finely chopped, to serve
  • Crispy fried shallots (optional), for garnish
  • 4 store-bought roti breads (optional), to serve
  • Lemon wedges, for squeezing

Instructions

  1. Rinse the lentils: Place the lentils in a fine-mesh sieve and rinse under running water until the water runs clear, removing any impurities.
  2. Cook the onion, garlic, and ginger: Heat the coconut oil in a deep, heavy-based frying pan over medium heat. Add the diced onion and cook for 2–3 minutes until softened. Then add the chopped garlic and ginger and cook for an additional 1 minute to release their aromas.
  3. Add the lentils and spices: Stir in the sweet paprika, ground turmeric, ground cumin, and garam masala, mixing well to coat the onion mixture with the spices. Immediately add the rinsed lentils to the pan.
  4. Add liquids and seasonings: Pour in the vegetable stock, coconut milk, and canned diced tomatoes. Season with sea salt flakes, freshly cracked black pepper, and sugar. Stir everything together to combine evenly.
  5. Simmer the dal: Bring the mixture to a gentle simmer, then cook uncovered for about 20 minutes, stirring occasionally to prevent sticking, until the lentils have softened and the dal thickens slightly.
  6. Incorporate the spinach: Add the baby spinach leaves to the pan and stir through until just wilted, then remove the pan from the heat to preserve the spinach’s vibrant color and nutrients.
  7. Serve the Coconut Dal: Spoon the dal into bowls and serve with a swirl of plain yoghurt, freshly chopped coriander, optional crispy fried shallots, flaky roti breads on the side, and a wedge of lemon to squeeze over just before eating for a fresh, tangy finish.

Notes
