Description

This refreshing Yogurt Bark is a healthy and delicious frozen treat made with creamy Greek yogurt, sweet honey, and vanilla, topped with fresh strawberries, blueberries, and crunchy almonds. Perfect for a nutritious snack or a light dessert, it requires no baking and is easy to prepare. Simply mix, spread, freeze, and break into pieces for a delightful, guilt-free indulgence.

Ingredients

Scale

Yogurt Base

  • 2 cups Greek yogurt (or regular plain yogurt)
  • 1/4 cup Honey
  • 3/4 tsp Vanilla extract

Toppings

  • 1 cup Strawberries (sliced; measured after slicing)
  • 1 cup Blueberries
  • 1/4 cup Almonds (sliced or slivered; or sunflower seeds for a nut-free option)

Instructions

  1. Prepare the Pan: Line a jelly roll pan with parchment paper to prevent sticking and make it easy to remove the yogurt bark after freezing.
  2. Mix the Yogurt Base: In a medium bowl, whisk together the Greek yogurt, honey, and vanilla extract until smooth and fully combined.
  3. Spread the Yogurt: Pour or spoon the yogurt mixture onto the prepared sheet pan, spreading it evenly to form a consistent layer.
  4. Add Strawberries: Arrange the sliced strawberries evenly over the yogurt mixture, pressing them gently into the surface to ensure they stick.
  5. Add Blueberries: Fill the open spaces around the strawberries with blueberries, pressing them lightly into the yogurt as well.
  6. Sprinkle Almonds: Evenly sprinkle the sliced almonds over the berries and yogurt, gently pressing them to adhere.
  7. Freeze: Place the pan in the freezer and freeze for at least 2 hours or overnight until the yogurt bark is completely firm.
  8. Serve: Once frozen, slide the parchment paper with the yogurt bark onto a cutting board and cut or break it into pieces. Enjoy immediately after thawing a few minutes, or store in an airtight freezer bag for later.

Notes

  • You can substitute regular plain yogurt if Greek yogurt is unavailable, but Greek yogurt offers a thicker consistency.
  • Use sunflower seeds as a nut-free alternative to almonds.
  • For added flavor, try mixing in other fresh fruits or nuts of your choice.
  • Store the yogurt bark in the freezer to maintain its texture and freshness.
  • Allow the bark to sit at room temperature for a few minutes before eating to soften slightly for easier biting.
