Ingredients
Scale
Whipped Butter Mixture
- 8 oz unsalted butter, room temperature
- 3 tbsp heavy cream
- 1 lemon, zest only
- ¼ cup chives, chopped
- Flaky salt, to taste
Main
- 6–8 French radishes
To Serve
- 1 loaf ciabatta, sliced and toasted with olive oil
Instructions
- Prepare the whipped butter: In a mixing bowl, whip the room temperature unsalted butter together with lemon zest and heavy cream using a mixer until the mixture is fluffy and soft, about 5 minutes. Be careful not to over whip to maintain a smooth texture.
- Shave the radishes: Using a mandoline or a sharp knife, shave the French radishes into very thin slices. Pat the slices dry with a towel to remove excess moisture for better texture and layering.
- Build the butter tower: On a serving plate, place a dollop of the whipped butter and sprinkle chopped chives and flaky salt on top. Repeat this layering process 3 to 4 times, making each subsequent layer slightly smaller than the one beneath to form a tower shape.
- Assemble the tower with radishes: Arrange the thinly shaved radish slices carefully around and on top of the butter layers, creating a visually appealing tower with contrasting colors and textures.
- Serve with toasted ciabatta: Serve the whipped butter and radish tower alongside slices of ciabatta bread toasted with olive oil. Enjoy immediately as a fresh and creamy appetizer or snack.
Notes
- Use room temperature butter to achieve the best whipping consistency.
- Thinly shaved radishes create a delicate texture and enhance the tower’s presentation.
- Flaky salt adds a lovely crunch and flavor contrast, but adjust to taste.
- Toasting the ciabatta with olive oil adds a savory, crispy complement to the creamy butter and crisp radishes.
- This dish is best served fresh to maintain the butter’s fluffiness and radish crunch.
