Cheese Mixture

Salted Apple Cider Caramel
- 1 cup apple cider
- 1 tbsp cane sugar
- 3 tbsp brown sugar
- 1 tbsp butter
- 1 tbsp heavy cream
- ¼ to ½ tsp kosher salt
Toppings & Serving
- Flaky salt to taste

Instructions
- Make Apple Cider Reduction: Pour the apple cider, cane sugar, and brown sugar into a medium saucepan. Stir to combine and cook over medium-high heat, stirring every few minutes until the mixture reduces by half and thickly coats the back of a spoon, about 12-14 minutes.
- Add Butter and Finish Caramel: Stir in the butter and cook for an additional minute to incorporate. Remove from heat, then mix in the kosher salt and heavy cream. If the caramel is too thick or hardens upon cooling, thin it with extra cream or a splash of apple cider until desired consistency is reached.
- Whip Brie and Cream Cheese: Using a mixer or food processor, whip the rindless brie and cream cheese together until very smooth and creamy. This will create a spreadable base for the caramel topping.
- Assemble and Serve: Spread the whipped cheese mixture onto a serving plate. Drizzle generously with the salted apple cider caramel. Sprinkle flaky salt and toasted pecans and almonds on top. Serve with fresh apple slices or, alternatively, crackers and bread.
