  • 34 tbsp smooth peanut butter (to taste)
  • 34 tbsp agave syrup (or maple syrup/powdered sugar, to taste)
  • 1 tsp vanilla paste or extract
  • 1 pinch salt

Chocolate Ganache:

  • 100 grams 70% dark chocolate (chips or chopped)
  • 400g tin full-fat coconut milk

Instructions

  1. Prepare the Peanut Butter Mousse: In a blender, combine silken tofu, peanut butter, sweetener, vanilla, and salt. Blend until smooth, adjusting ingredients to taste.
  2. Chill the Mousse: Spoon the mousse into ramekins or jars. Cover and refrigerate while you prepare the ganache.
  3. Make the Chocolate Ganache: Melt the dark chocolate, then whisk in the creamy part of the coconut milk until well combined.
  4. Assemble: Pour the ganache over the set peanut butter mousse. Chill in the fridge for at least 1 hour to set.
