  • Diet: Low Fat

Description

These Turkey and Stuffing Meatballs combine ground turkey with traditional stuffing ingredients like mushrooms, celery, dried cranberries, and poultry seasoning to create moist, flavorful meatballs perfect for an appetizer or light meal. Baked to perfection, they offer a delicious twist on classic holiday flavors in an easy-to-make dish.

Ingredients

Scale

Main Ingredients

  • ½ lb. mushrooms, finely chopped (about 3 cups)
  • 1 cup onion, finely chopped (about ½ large onion)
  • ½ cup celery, finely chopped
  • 1 lb. ground turkey breast
  • ½ cup coarsely ground cornmeal or dry cornbread stuffing
  • ½ cup dried cranberries
  • 1 egg, lightly beaten
  • 1 tsp poultry seasoning
  • ½ tsp garlic powder
  • 1 tsp kosher salt
  • ½ tsp black pepper

Instructions

  1. Preheat oven: Preheat your oven to 375ºF (190ºC). Line a sheet pan with parchment paper or lightly brush or spray it with oil to prevent sticking.
  2. Mix ingredients: In a large bowl, thoroughly combine the finely chopped mushrooms, onion, celery, ground turkey breast, cornmeal or dry cornbread stuffing, dried cranberries, lightly beaten egg, poultry seasoning, garlic powder, kosher salt, and black pepper until evenly mixed.
  3. Form meatballs: Using a meatball scoop or melon baller, shape the mixture into 24 meatballs approximately 1½ inches in diameter. The mixture will be moist but should hold its shape well. Place each meatball about 1 inch apart on the prepared sheet pan.
  4. Bake: Bake the meatballs uncovered in the preheated oven for 18-22 minutes or until the internal temperature reaches 165ºF (74ºC) using a meat thermometer to ensure they are fully cooked and safe to eat.
  5. Serve: Remove from oven and serve warm. These meatballs are delicious on their own with mini skewers or paired with cranberry sauce for dipping. Optionally, garnish with a sprinkle of parsley for extra color and freshness.

Notes

  • Make sure the internal temperature reaches 165ºF for safe consumption of poultry.
  • You can substitute poultry seasoning with a mix of sage, thyme, and rosemary for a homemade blend.
  • For a moist texture, do not overmix the meatball ingredients.
  • These meatballs freeze well; bake and cool before freezing. Reheat in a 350ºF oven until warmed through.
  • Serve as appetizers, snacks, or a light main dish with a side salad.
