Instructions
- Boil Potatoes: In a large pot, place the peeled and quartered Yukon gold potatoes and cover with water by at least 2 inches. Add kosher salt generously to season the water. Bring to a boil over high heat and cook until the potatoes are tender and easily pierced with a fork, about 12 minutes.
- Drain Potatoes: Once cooked, drain the potatoes thoroughly and return them to the pot to prepare for mashing.
- Mash Potatoes: Using a wooden spoon or potato masher, mash the potatoes until nearly smooth but still with some chunks for texture. Add the melted vegan butter and toasted sesame oil. Stir well to combine all ingredients and add the thinly sliced green onions (reserving some for garnish) and minced garlic. Continue stirring until the potatoes reach your desired consistency. Season with additional salt and freshly ground black pepper to taste.
