- 1 tablespoon olive oil
- 3 cups shredded cooked turkey
Vegetable Mixture:
- 2 cups chopped onions
- 1 tablespoon garlic, minced
- 1 red bell pepper, deseeded and chopped
- 1 jalapeño, deseeded and chopped
Seasonings:
- 1 teaspoon dried oregano
- 2 bay leaves
- 3 tablespoons chili powder
- 1 heaping tablespoon light brown sugar
- 2 teaspoons cumin
Additional Items:
- 3 cups canned diced tomatoes
- 3 cups chicken broth
- Salt and pepper to taste
- 1 can kidney beans, drained and rinsed
Instructions
- Sauté Vegetables and Seasonings: Heat olive oil in a large pot over medium-high heat. Add onions, garlic, celery, red pepper, jalapeño, oregano, bay leaves, brown sugar, chili powder, and cumin. Cook for 5 minutes, stirring occasionally.
- Add Turkey and Tomatoes: Stir in shredded turkey, diced tomatoes, chicken broth, salt, and pepper. Bring to a boil, then reduce heat and simmer for 5 minutes.
- Incorporate Beans: Mix in kidney beans and continue to cook for another 10 minutes, stirring occasionally.
- Serve: Serve the chili hot, garnished with a dollop of sour cream and shredded cheese.
Notes
- You can adjust the spice level by increasing or decreasing the amount of chili powder and jalapeño.
