Vegetable Mixture:

  • 1 red bell pepper, deseeded and chopped
  • 1 jalapeño, deseeded and chopped

Seasonings:

  • 1 teaspoon dried oregano
  • 2 bay leaves
  • 3 tablespoons chili powder
  • 1 heaping tablespoon light brown sugar
  • 2 teaspoons cumin

Additional Items:

  • 3 cups canned diced tomatoes
  • 3 cups chicken broth
  • Salt and pepper to taste
  • 1 can kidney beans, drained and rinsed

Instructions

  1. Sauté Vegetables and Seasonings: Heat olive oil in a large pot over medium-high heat. Add onions, garlic, celery, red pepper, jalapeño, oregano, bay leaves, brown sugar, chili powder, and cumin. Cook for 5 minutes, stirring occasionally.
  2. Add Turkey and Tomatoes: Stir in shredded turkey, diced tomatoes, chicken broth, salt, and pepper. Bring to a boil, then reduce heat and simmer for 5 minutes.
  3. Incorporate Beans: Mix in kidney beans and continue to cook for another 10 minutes, stirring occasionally.
  4. Serve: Serve the chili hot, garnished with a dollop of sour cream and shredded cheese.
