  • 2 limes, juiced
  • 2 lemons, juiced

Simple Syrup

  • 1/4 cup sugar
  • 1/4 cup water

Instructions

  2. Prepare Pineapple Mixture: In a blender or food processor, combine pineapple juice, fresh pineapple chunks, juice of 1 lemon and 1 lime, and 1 tablespoon of the cooled simple syrup. Blend until smooth. Taste the mixture and adjust by adding the remaining lemon and lime juice or simple syrup as needed to achieve a balanced, tart sweetness typical of Dole Whip.
  3. Reserve Syrup: Once the pineapple mixture is perfected, set aside half of it for use as syrup later. Pour this reserved portion through a fine sieve to remove pulp, resulting in a smooth pineapple syrup for topping.
