Cauliflower:
- 1 large head or 2 small heads cauliflower, cut into small bite-size pieces
- 2 Tbsp. olive oil
- 1/4 tsp. freshly ground black pepper
- 1/2 tsp. salt
- 1 tsp. garlic powder
- 1/4 tsp. onion powder
Cheese Sauce:
- 1 1/2 cups heavy whipping cream
- 4 ounces cream cheese, cubed
- 1 cup shredded cheddar cheese
- 1 cup gruyere cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/4 tsp. paprika (optional)
Instructions
- Preheat Oven: Preheat oven to 425 degrees F. Toss cauliflower with olive oil, salt, and pepper on a baking sheet. Roast for 15-20 minutes until tender.
- Make Cheese Sauce: In a pot, combine cream and cream cheese over low heat. Add remaining cheeses, spices, and stir until smooth. Remove from heat.
- Combine and Serve: Add roasted cauliflower to the cheese sauce, stir to coat. Serve hot, optionally sprinkled with paprika.
