For the Rolls

- 6 tablespoons (75 g) granulated sugar, divided
- 1 packet (2 ¼ teaspoons) active dry yeast
- 1 cup (245 g) whole milk, warmed (about 105-115°F)
- 7 tablespoons (99 g) unsalted butter, melted, divided
- 1 teaspoon kosher salt
- 1 large egg, room temperature
- 3 ½ cups (444.5 g) bread flour
For the Cinnamon Honey Butter
- ¼ cup (½ stick / 57 g) unsalted butter, softened
- 2 tablespoons confectioners’ sugar
- 2 tablespoons honey
- ½ teaspoon cinnamon
Instructions
- Activate yeast: In a bowl or the stand mixer bowl, combine the warm water, 1 teaspoon of sugar, and active dry yeast. Let this sit for about 5 minutes until the mixture is thick and the yeast has dissolved.
- Mix wet ingredients: Add the remaining 5 tablespoons of sugar, 6 tablespoons of melted butter, warm milk, and kosher salt to the yeast mixture. Mix until just combined.
- Add egg: Add the room temperature egg to the mixture and blend to combine evenly.
- Add flour and mix: Incorporate the bread flour into the wet mixture and beat with the dough hook on medium-high speed for about 3 minutes. Scrape down the dough to the center of the bowl as needed.
- Knead dough: Continue kneading the dough on low speed for an additional 3-4 minutes until smooth and elastic.
- First rise: Lightly spray a large bowl with nonstick cooking spray. Place the dough inside, cover with a clean kitchen towel or plastic wrap, and let it rise in a warm place for 1 to 2 hours until it doubles in size.
- Prepare baking dish: Lightly spray a 9×13-inch baking dish with nonstick cooking spray and set aside.
- Punch down and shape: Gently punch down the risen dough to deflate it. Divide the dough into 12 equal pieces by cutting or dividing repeatedly. Shape each piece into a smooth round ball.
- Second rise: Arrange the dough balls evenly in the prepared baking dish. Cover with a kitchen towel and allow the rolls to rise again in a warm place for about 30 minutes, until almost doubled.
- Preheat oven: While the rolls are rising the second time, preheat the oven to 350°F (175°C).
- Bake: Bake the rolls in the preheated oven for 12 to 15 minutes, or until they are golden brown on top.
- Brush with butter: Remove the rolls from the oven and immediately brush them with the remaining tablespoon of melted butter. Serve warm.
- Make cinnamon honey butter: In a medium bowl, combine the softened butter, confectioners’ sugar, honey, and cinnamon until smooth and creamy. Serve this spread alongside the warm rolls.
