French Silk Pie
- 2/3 cup granulated sugar
- 2 large eggs
- 2 oz unsweetened chocolate, melted
- 2 teaspoons vanilla extract

- 1/3 cup butter, softened
- 2/3 cup heavy whipping cream
- 2 tablespoons powdered sugar
Whipped Cream Topping
- 1/2 cup heavy whipping cream
- 1 tablespoon powdered sugar
- 1 teaspoon vanilla extract
Oreo Crust
- 10–12 Oreo sandwich cookies
- 2 tablespoons butter, melted
Filling
- 1/2 cup cocktail peanuts, chopped
- 1/2 cup Lay’s potato chips, chopped
- 1/2 cup pretzels, chopped
Instructions
- Prepare the whipped creams: In a large mixing bowl, beat 2/3 cup heavy cream until it begins to thicken. Add 2 tablespoons powdered sugar and continue beating until stiff peaks form. Refrigerate this whipped cream. In another bowl, repeat the process with 1/2 cup heavy cream, 1 tablespoon powdered sugar, and 1 teaspoon vanilla extract to prepare the topping whipped cream. Chill separately.
- Cook the sugar and eggs mixture: In a small saucepan, combine granulated sugar and eggs. Cook over low heat, stirring constantly to avoid scrambling, for about 5-7 minutes until the eggs are tempered. Increase heat to medium-low and continue cooking while stirring until the mixture reaches 160°F and thickly coats the back of a spoon, up to 20 minutes.
- Combine chocolate and vanilla: Remove saucepan from heat, stir in melted unsweetened chocolate and vanilla extract until smooth. Let cool to lukewarm (90°F), stirring occasionally.
- Make the chocolate filling: In a small bowl, cream softened butter until light and fluffy. Add the cooled chocolate mixture and unsweetened cocoa powder, beating on high speed until light and fluffy.
- Incorporate whipped cream: Remove the first whipped cream from the refrigerator. Add half of it to the chocolate mixture and whisk gently until just combined. Fold in the remaining whipped cream gently until no white streaks remain. Chill filling in the fridge for several hours.
- Prepare Oreo crust: Crush Oreo cookies finely and mix with melted butter. Press a few spoonfuls of this mixture into the bottom of each shot glass, packing down firmly with the back of a teaspoon.
- Assemble dessert shooters: Fill each glass halfway with the chilled chocolate pie filling using a piping bag or spoon. Sprinkle a pinch of the chopped cocktail peanuts, potato chips, and pretzels mixture on top of the filling.
- Add final layers and topping: Add another layer of pie filling to fill the glass nearly to the top. Finish with a dollop of the prepared whipped cream topping. Garnish as desired and serve immediately for best texture and freshness.
