Instructions

  1. Prepare the Cream Cheese Mixture: In a medium mixing bowl, combine the cream cheese, granulated sugar, and lemon juice. Using a hand mixer on medium speed, beat the ingredients together until the mixture is smooth and creamy. Gently fold in the diced strawberries to keep some texture.
  2. Assemble the Egg Rolls: Lay out the egg roll wrappers on a clean surface. Place 2-3 tablespoons of the cream cheese and strawberry mixture onto the center of each wrapper.
  3. Wrap the Egg Rolls: Wet the edges of the egg roll wrapper with water to help seal. Fold the bottom corner of the wrapper over the filling, then roll once to enclose the cream cheese mixture.
  4. Fold the Sides: Fold the left and right corners of the wrapper toward the center, pressing lightly to seal. Add more water as needed to keep the folds secure, creating an open-envelope shape.
  5. Finish Rolling and Seal: Continue rolling the wrapper tightly until the filling is completely enclosed. Press firmly to seal all edges to prevent filling from leaking during cooking.
  6. Prepare for Air Frying: Spray or brush the outside of each egg roll with cooking oil to ensure a crispy golden crust when fried.
  7. Air Fry the Egg Rolls: Place the egg rolls in a single layer in your air fryer basket. Air fry at 400°F (200°C) for 4-5 minutes, flipping halfway through, until they are golden brown and crispy. Cook in batches if necessary to avoid overcrowding.
  8. Cool and Serve: Transfer the cooked egg rolls to a plate and allow them to cool slightly. Just before serving, dust generously with confectioners’ sugar for a sweet finishing touch.
