Ingredients
Scale
Dry Ingredients
- 2 cups rolled old-fashioned oats
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- ½ teaspoon sea salt
Wet Ingredients
- ¼ cup pure maple syrup
- 2 cups non-dairy milk of choice
- 1 large egg (or 1 Tablespoon ground flaxseed as egg substitute)
- 2 Tablespoons coconut oil, melted
- 2 teaspoons vanilla extract
- 1 ripe banana, mashed
Fruits and Extras
- 1 ripe banana, sliced (½ used in mix, rest for topping)
- 1 ½ cups fresh quartered strawberries (divided)
- ¼ cup chocolate chips (divided)
- Cooking spray for pan
- Additional strawberries, banana slices and milk for serving
Instructions
- Set Oven: Preheat your oven to 375°F (190°C) to prepare for baking.
- Prepare Pan: Spray an 8-inch square baking dish evenly with cooking spray to prevent sticking.
- Mix Dry Ingredients: In a large bowl, combine rolled oats, baking powder, cinnamon, and sea salt. This forms the base of the oatmeal mixture.
- Add Wet Ingredients and Mash Banana: To the oat mixture, add the non-dairy milk, pure maple syrup, egg or flaxseed substitute, melted coconut oil, vanilla extract, and the mashed ripe banana. Stir thoroughly until fully combined.
- Fold in Additional Ingredients: Gently fold in 1 cup of quartered strawberries, half of the sliced banana, and half of the chocolate chips to add texture and sweetness inside the bake.
- Pour Batter: Carefully pour the oatmeal mixture into the prepared baking dish, spreading it evenly.
- Add Toppings: Scatter the remaining strawberries, banana slices, and chocolate chips evenly on top of the batter to enhance flavor and appearance.
- Bake: Bake in the preheated oven for 50 to 60 minutes, or until the center is mostly set, though it might remain a bit moist due to the strawberries. The edges and top will turn a lovely golden brown.
- Cool and Serve: Remove the baked oatmeal from the oven and allow it to cool for a few minutes so it firms up slightly. Portion into servings and top with extra fresh strawberries, banana slices, and a splash of milk if desired.
Notes
- You can substitute the large egg with 1 tablespoon of ground flaxseed mixed with 3 tablespoons of water for a vegan option.
- If you prefer sweeter oatmeal, increase maple syrup slightly, but keep in mind natural sweetness from the bananas and strawberries.
- Using non-dairy milk keeps this recipe dairy-free; almond, oat, or soy milk work well.
- Ensure not to overbake as the oatmeal continues to set during cooling.
- Leftovers keep well refrigerated for 3-4 days and are great reheated for a quick breakfast.
