  • 1 tsp sea or kosher salt

Steak:

  • 1 lb flat iron steak (diced into 1″ pieces)
  • 3 tbsp olive oil (divided)

Vegetables:

  • 2 cloves garlic (minced)
  • 2 bell peppers (seeded and diced into 1″ pieces)
  • 4 green onions (thinly sliced)

Seasonings:

  • 2 tbsp coconut aminos
  • 2 tsp cracked black pepper
  • 2 tbsp fresh chopped cilantro

Instructions

  1. Prepare Sweet Potatoes: Place diced sweet potatoes in a microwave-safe bowl, sprinkle with salt, cover, and microwave until just tender.
  2. Cook Steak: Heat a skillet, cook steak until browned, then set aside.
  3. Cook Vegetables: In the same skillet, cook sweet potatoes until browned, add garlic, bell peppers, and scallions.
  4. Combine Ingredients: Add steak back to the pan along with coconut aminos, cook until liquid evaporates.
  5. Finish and Serve: Add pepper and cilantro, toss, and remove from heat. Serve hot.
