Sweet Potatoes:

- 1 tsp sea or kosher salt
Steak:
- 1 lb flat iron steak (diced into 1″ pieces)
- 3 tbsp olive oil (divided)
Vegetables:
- 2 cloves garlic (minced)
- 2 bell peppers (seeded and diced into 1″ pieces)
- 4 green onions (thinly sliced)
Seasonings:
- 2 tbsp coconut aminos
- 2 tsp cracked black pepper
- 2 tbsp fresh chopped cilantro
Instructions
- Prepare Sweet Potatoes: Place diced sweet potatoes in a microwave-safe bowl, sprinkle with salt, cover, and microwave until just tender.
- Cook Steak: Heat a skillet, cook steak until browned, then set aside.
- Cook Vegetables: In the same skillet, cook sweet potatoes until browned, add garlic, bell peppers, and scallions.
- Combine Ingredients: Add steak back to the pan along with coconut aminos, cook until liquid evaporates.
- Finish and Serve: Add pepper and cilantro, toss, and remove from heat. Serve hot.
