Ingredients
Egg Mixture:
- 8 large eggs
- 2 cups cottage cheese

- 1 cup roasted pumpkin cubes
- 2 cups fresh spinach, chopped
- 1/2 cup crumbled feta cheese
- 1 tsp dried thyme
- 1/4 tsp garlic powder
- 1 tbsp olive oil (for greasing)
- Salt and pepper to taste
Instructions
- Preheat the Oven: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish with olive oil.
- Prepare the Egg Mixture: In a large bowl, whisk the eggs until well combined. Add cottage cheese to the eggs and mix gently.
