  • 1 ripe avocado, sliced
  • 1 small cucumber, thinly sliced
  • 1 small red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • Fresh cilantro, chopped (optional, for garnish)
  • 2 tablespoons sriracha or other hot sauce (adjust to taste)
  • 1 tablespoon sesame oil
  • 1 tablespoon lime juice
  • 1 teaspoon soy sauce or tamari (for gluten-free option)
  • 1 teaspoon honey or maple syrup (for sweetness)

For Optional Garnishes

  • Toasted sesame seeds
  • Crushed peanuts or cashews
  • Lime wedges

Instructions

  1. Prepare the Rice If you haven’t cooked the rice already, cook the rice according to the package instructions. Use white or brown rice depending on your preference. Once the rice is cooked, fluff it with a fork and stir in the rice vinegar, sugar (optional), and salt. Set aside.
  2. Cook the Shrimp Heat olive oil in a skillet, sauté garlic, add shrimp and season with spices. Cook until pink and opaque. Squeeze lime juice over shrimp.
