Instructions

  1. Activate the Yeast: Heat water to 115°F and combine with the active dry yeast and granulated sugar. Let this mixture proof for 5-10 minutes until frothy, indicating the yeast is active.
  2. Make the Dough: In a large bowl or stand mixer, mix together the flour and salt. While mixing, slowly add the yeast mixture followed by olive oil. Continue mixing until the dough forms a smooth ball. If needed, knead by hand. Place the dough in a lightly greased bowl, cover, and allow to rise in a warm spot for about 1 hour, or until doubled in size.
  3. Prepare the Spiced Chicken: Slice the chicken breast in half horizontally to create thinner pieces. Place chicken and all spices (chili powder, cayenne pepper, ground black pepper, garlic powder, onion powder, salt) into a small saucepan. Add enough chicken broth to cover the chicken entirely. Cook over medium heat until chicken is fully cooked, then remove and shred the chicken. Return the shredded chicken to the saucepan and simmer until the broth evaporates, leaving the flavorful chicken dry.
  4. Preheat the Oven: Set your oven to 425°F to prepare for baking the pizza.
  5. Assemble the Pizza: Lightly grease a baking sheet with olive oil. Shape the risen dough to your desired pizza size and thickness on the sheet. Spread the pizza sauce evenly over the dough surface. Sprinkle the Parmesan cheese next, followed by the shredded spiced chicken. Then add mozzarella and cheddar cheeses evenly on top.
