Bread:

  • 2 cups zucchini (about 1 large zucchini, grated)

Topping:

  • 1/2 cup granulated sugar
  • 1 teaspoon cinnamon

Instructions

  1. Preheat oven: to 350 degrees. Grease and flour two standard-sized loaf pans.
  2. Combine wet ingredients: In a large bowl, beat oil, eggs, sugar, and vanilla extract until well combined.
  3. Combine dry ingredients: In a separate bowl, whisk together flour, cinnamon, allspice, baking soda, baking powder, and salt.
  4. Mix batter: Pour the flour mixture into the egg mixture and beat until fully mixed. Add zucchini and mix again.
  5. Prepare topping: In a small bowl, combine the topping ingredients.
  6. Layer batter: Pour half the batter into pans, sprinkle with half of the cinnamon sugar mixture. Cover with remaining batter and sprinkle with the rest of the cinnamon sugar.
