Instructions
- Prepare Marinade. In a medium bowl, whisk together soy sauce, balsamic vinegar, Worcestershire sauce, ¾ cup beef broth, brown sugar, dried rosemary, dried thyme, black pepper, and olive oil until combined.
- Marinate the Meat. Place the London broil in a resealable plastic bag or shallow dish, pour the marinade over it ensuring even coating. Seal and refrigerate for at least 4 hours or preferably overnight to infuse flavors.
- Sear the Meat. After marinating, heat a skillet over medium-high heat. Sear the London broil on all sides for 2-3 minutes each to lock in flavors. Transfer meat and marinade to the slow cooker.
- Prepare Vegetables. Arrange sliced onion, carrot chunks, potato chunks, and garlic cloves around the meat inside the slow cooker.
