  • ½ tsp. dried rosemary
  • ½ tsp. dried thyme
  • ¼ tsp. black pepper
  • 1 Tbsp. olive oil

  • 1 medium onion, sliced
  • 2 carrots, peeled and cut into chunks
  • 2 potatoes, cut into chunks
  • 4 garlic cloves
  • 1 cup beef broth (remaining from total 1¾ cups)

Optional

  • 1 Tbsp. cornstarch (for thickening sauce)

Instructions

  1. Prepare Marinade. In a medium bowl, whisk together soy sauce, balsamic vinegar, Worcestershire sauce, ¾ cup beef broth, brown sugar, dried rosemary, dried thyme, black pepper, and olive oil until combined.
  2. Marinate the Meat. Place the London broil in a resealable plastic bag or shallow dish, pour the marinade over it ensuring even coating. Seal and refrigerate for at least 4 hours or preferably overnight to infuse flavors.
  3. Sear the Meat. After marinating, heat a skillet over medium-high heat. Sear the London broil on all sides for 2-3 minutes each to lock in flavors. Transfer meat and marinade to the slow cooker.
  4. Prepare Vegetables. Arrange sliced onion, carrot chunks, potato chunks, and garlic cloves around the meat inside the slow cooker.
  5. Add Remaining Broth. Pour the remaining 1 cup beef broth over the meat and vegetables until liquid reaches about halfway up the side of the meat.
  6. Slow Cook. Cover and cook on low for 6-8 hours or until the meat is fork-tender.
