Ingredients
Scale
Meat and Vegetables
- 1 lb. ground beef
- 1 cup white onion, diced
- 1 1/2 lbs. russet potatoes, diced into 1/2 inch cubes with skin on (about 5 cups)
- 15.25 oz. can corn, drained
Seasonings and Dairy
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. garlic powder
- 21.5 oz. cream of mushroom soup (two 10.75 oz. cans, do not add water)
- 2 cups shredded sharp cheese, divided
Instructions
- Brown the beef and onion: In a large skillet over medium-high heat, cook the ground beef and diced onion together until the beef is browned and the onion is softened. Drain excess fat to reduce grease in the dish.
- Prepare the slow cooker base: Wash and dry the potatoes, then dice them into small 1/2 inch cubes, leaving the skin on for added texture and nutrients. Add the diced potatoes to the slow cooker bowl. Pour the cooked beef and onion mixture over the potatoes.
- Add remaining ingredients: In the slow cooker, add the cream of mushroom soup, salt, pepper, garlic powder, drained corn, and half of the shredded sharp cheese. Stir well to combine all ingredients evenly. Spread the hash out into a flat, even layer to ensure uniform cooking.
- Slow cook the hash: Cover the slow cooker with the lid and cook on LOW heat for 5 hours. Avoid opening the lid during this time to maintain steady cooking and moisture levels.
- Finish with cheese topping: After 5 hours, sprinkle the remaining shredded sharp cheese evenly over the top of the hash. Cover again and let the cheese melt for about 10 minutes before serving.
Notes
- Leaving the potato skins on helps retain nutrients and adds texture.
- Do not add water to the cream of mushroom soup cans; the recipe uses the soup as-is for creaminess.
- Resist opening the slow cooker lid during cooking to avoid heat loss and ensure even cooking.
- This dish can be customized with additional vegetables like bell peppers or substituted with ground turkey for a leaner option.
- Leftovers store well in the refrigerator for up to 3 days and reheat easily.
