Ingredients

Scale

For the Shrimp:

  • All-purpose seasoning for shrimp (e.g., Lawry’s seasoning salt, Mrs. Dash garlic & herb)
  • 2 lbs. large shrimp, peeled, deveined, tail-off

For the Garlic Sauce:

  • 20 oz. refrigerated three cheese tortellini (e.g., Buitoni)
  • 1 tbsp. olive or grapeseed oil
  • 1/3 cup dry white wine
  • 8 tbsp. unsalted butter
  • 2 tbsp. minced garlic
  • 1 tbsp. all-purpose flour
  • 6 oz. seafood or chicken stock
  • 4 oz. cream cheese, softened
  • 2 cups heavy cream
  • 1 tsp dried basil
  • 5 oz. fresh baby spinach
  • 1/4 tsp crushed red pepper
  • 1/2 cup freshly grated Parmesan

Instructions

  1. Season the Shrimp: Season the shrimp with the all-purpose seasoning.
  2. Sear the Shrimp: In a large skillet, heat oil over medium-high heat. Sear shrimp in batches, about 1-2 minutes per side. Set aside.
  3. Prepare the Garlic Sauce: Deglaze the skillet with wine. Add butter and garlic, cook until fragrant. Stir in flour. Add stock, cream cheese, heavy cream, and basil. Simmer for 5-7 minutes.
  4. Cook the Pasta: Cook tortellini according to package instructions.
  5. Finish the Sauce: Add spinach to the sauce until wilted. Stir in red pepper flakes and Parmesan. Adjust seasoning.
  6. Combine and Serve: Add cooked tortellini and shrimp to the sauce. Stir together and serve warm.

Notes

  • Feel free to adjust the spice level by adding more or less red pepper flakes.
  • For a lighter version, you can use half-and-half instead of heavy cream.
