- 2 lbs. large shrimp, peeled, deveined, tail-off
For the Garlic Sauce:
- 20 oz. refrigerated three cheese tortellini (e.g., Buitoni)
- 1 tbsp. olive or grapeseed oil
- 1/3 cup dry white wine
- 8 tbsp. unsalted butter
- 2 tbsp. minced garlic
- 1 tbsp. all-purpose flour
- 6 oz. seafood or chicken stock
- 4 oz. cream cheese, softened
- 2 cups heavy cream
- 1 tsp dried basil
- 5 oz. fresh baby spinach
- 1/4 tsp crushed red pepper
- 1/2 cup freshly grated Parmesan
Instructions
- Season the Shrimp: Season the shrimp with the all-purpose seasoning.
- Sear the Shrimp: In a large skillet, heat oil over medium-high heat. Sear shrimp in batches, about 1-2 minutes per side. Set aside.
- Prepare the Garlic Sauce: Deglaze the skillet with wine. Add butter and garlic, cook until fragrant. Stir in flour. Add stock, cream cheese, heavy cream, and basil. Simmer for 5-7 minutes.
- Cook the Pasta: Cook tortellini according to package instructions.
- Finish the Sauce: Add spinach to the sauce until wilted. Stir in red pepper flakes and Parmesan. Adjust seasoning.
- Combine and Serve: Add cooked tortellini and shrimp to the sauce. Stir together and serve warm.
Notes
- Feel free to adjust the spice level by adding more or less red pepper flakes.
- For a lighter version, you can use half-and-half instead of heavy cream.
