For the Lemon-Caper Dressing

For the Shrimp
- 1 pound large shrimp, peeled and deveined

- ½ teaspoon crushed red pepper
- 1 tablespoon olive oil
Instructions
- Prepare the Lemon-Caper Dressing: In a large bowl, whisk together 3 tablespoons of olive oil with lemon juice, chopped lemon slices, chopped dill, sliced garlic, and chopped capers. Set this mixture aside to allow the flavors to meld.
- Season the Shrimp: In a separate medium bowl, season the peeled and deveined large shrimp with kosher salt and crushed red pepper, ensuring the shrimp are evenly coated.
- Cook the Shrimp: Heat 1 tablespoon of olive oil in a medium skillet over medium heat. Add the seasoned shrimp and sauté, stirring occasionally, until the shrimp are pink and lightly browned on the edges, about 3 to 4 minutes.
- Toss Shrimp with Dressing: Transfer the cooked shrimp to the bowl with the lemon-caper dressing and toss well to coat. You can serve the shrimp immediately or allow it to cool to room temperature. For enhanced flavor, the shrimp can marinate in the dressing for up to 1 day and can be served chilled or at room temperature.
