For the Energy Balls:

  • 1/4 cup shredded coconut, plus 3 tablespoons, (divided)
  • 1/2 cup creamy almond butter
  • 3 tablespoons pure maple syrup
  • 2 large soft medjool dates, (pitted*)
  • 1 teaspoon pure vanilla extract
  • 1/2 cup old fashioned rolled oats
  • 1 scoop vanilla protein powder, (or unflavored)
  • 1/4 teaspoon kosher salt
  • 1 tablespoon chia seeds
  • 1 tablespoon mini chocolate chips
  • Flaky sea salt, (for sprinkling on top)

For the Chocolate Coating:

  • 1/2 cup chocolate chips
  • 1/2 teaspoon coconut oil

Instructions

  1. Preheat Oven: Preheat oven to 350 degrees F. Toast 1/4 cup shredded coconut on a lined baking sheet for 5 minutes. Let it cool.
  2. Prepare Energy Ball Mixture: In a food processor, combine almond butter, maple syrup, dates, vanilla extract, oats, protein powder, and salt. Process until well combined.
  3. Form Energy Balls: Transfer mixture to a bowl, add toasted coconut, chia seeds, and mini chocolate chips. Shape into balls.
  4. Make Chocolate Coating: Melt chocolate chips and coconut oil in the microwave.
  5. Coat Energy Balls: Dip energy balls in chocolate, place on a lined tray, drizzle with more chocolate, and top with coconut and sea salt.
  6. Chill: Refrigerate the balls for about 1 hour until the chocolate sets. Enjoy!
