Bread Pudding:

  • 810 cups Brioche or Challah Bread (cut into 2-inch cubes)
  • 4 cups Half-n-Half (may substitute whole milk)
  • 5 Eggs (slightly beaten)
  • 2 Tablespoons Vanilla
  • 12 Tablespoons Butter (3/4 cup, Melted)
  • 1 1/4 cup Brown Sugar
  • 1/4 cup Sugar

Salted Caramel Sauce:

  • 1/2 cup Butter
  • 1/2 cup Brown Sugar
  • 1/2 cup Heavy Cream
  • 1 teaspoon Sea Salt Flakes

Instructions

  1. Preheat oven to 350 degrees. Put bread pieces in large mixing bowl.
  2. In a small bowl, whisk together half-n-half, eggs, and vanilla extract. Pour egg-milk mixture over the bread, tossing gently. Pour into greased 9 x 13 baking pan.
  3. In a medium saucepan, melt butter over medium heat. Remove from heat and whisk in brown sugar and sugar until smooth. Pour over the bread pudding and toss gently.
  4. Cover the baking dish with foil and refrigerate for 1 hour. Bake for 45-55 minutes, then remove foil and bake for 10-15 more minutes until golden brown.
  5. To make the salted caramel sauce: Melt butter in a saucepan over medium heat. Remove from heat, add brown sugar, and whisk until smooth. Stir in heavy cream and salt flakes until smooth.
  6. Pour the caramel sauce over the bread pudding and serve warm.
  7. Top with fresh whipped cream if desired.

Notes

  • For a richer flavor, you can use brioche bread instead of challah.
