Rotel Dip Recipe

  • Author: lilan
  • Total Time: 15 minutes
  • Yield: Approximately 6 servings 1x

Description

This classic Rotel Dip is a deliciously creamy, cheesy appetizer made with ground beef, processed cheese, and diced tomatoes with chilies. Perfectly spiced and quick to prepare, it’s ideal for serving at parties, game days, or casual gatherings alongside crispy tortilla chips.

Ingredients

Scale

Meat

  • 1 pound lean ground beef (or mild, hot sausage)

Dairy and Cheese

  • 16 ounces processed cheese loaf (such as Velveeta)

Vegetables and Seasonings

  • 10 ounces canned diced tomatoes with chilies (including juices, such as Rotel, 1 can)
  • ½ teaspoon chili powder (optional)

Instructions

  1. Cook the Meat: In a large skillet over medium-high heat, cook the ground beef or sausage until fully browned and no pink remains. Drain any excess fat to keep the dip from being greasy.
  2. Lower Heat: Reduce the skillet heat to medium to prepare for melting the cheese without burning it.
  3. Add Ingredients: Stir in the processed cheese loaf cut into chunks, the entire can of diced tomatoes with chilies including the juices, and the optional chili powder to the skillet.
  4. Melt and Combine: Continuously stir the mixture until the cheese is completely melted and the dip is smooth and creamy, ensuring the ingredients are well integrated.
  5. Serve: Transfer to a serving dish and enjoy warm with tortilla chips for dipping.

Notes

  • Processed cheese like Velveeta works best for a creamy texture but can be substituted with other processed cheese loaves if preferred.
  • Optional chili powder adds a little extra spice but can be omitted for a milder flavor.
  • For a sausage version, mild or hot varieties both work well depending on heat preference.
  • This dip can be kept warm in a slow cooker on low or reheated gently to maintain its creamy consistency.
  • Leftovers can be refrigerated for up to 3 days and reheated on the stovetop or microwave.
