Description

Indulge in these decadent Reese’s Peanut Butter Cup Stuffed Brookie Bars that combine the best of chocolate chip cookies and fudgy brownies with a surprise peanut butter cup in the center. Perfect for satisfying any chocolate lover’s sweet tooth, these brookies boast a rich, gooey texture with layers of cookie, chocolate candy, and brownie all in one bite.

Ingredients

Scale

Bottom Layer

  • 17.5 oz Chocolate Chip Cookie mix
  • 1 stick unsalted butter, softened (113 g)
  • 1 large egg

Middle Layer

  • 30 miniature Reese’s Peanut Butter Cups, unwrapped

Top Layer

  • 18.3 oz Fudge Brownie box mix
  • 1/4 cup water (60 ml)
  • 2/3 cup vegetable oil (160 ml)
  • 2 large eggs

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and generously spray a 9×13 inch baking pan with cooking spray to ensure easy removal of your brookie bars.
  2. Make the Cookie Dough: In a mixing bowl, combine the chocolate chip cookie mix, softened unsalted butter, and one egg. Stir together until you have a soft dough consistency. Press this dough evenly into the bottom of the prepared baking pan to form the base layer.
  3. Add Peanut Butter Cups: Gently press the 30 miniature unwrapped Reese’s Peanut Butter Cups evenly into the cookie dough base. Arrange them in 6 rows of 5 cups each, making sure they are slightly embedded but still visible.
  4. Prepare Brownie Batter: In the same bowl, combine the fudge brownie mix with 1/4 cup water, 2/3 cup vegetable oil, and 2 eggs. Mix everything thoroughly until smooth and well incorporated.
  5. Pour Brownie Layer: Carefully pour the brownie batter over the cookie and peanut butter cup layers, covering all the candy evenly and spreading it out to the edges of the pan.
  6. Bake: Place the pan in the preheated oven and bake for 40-45 minutes. The brookies are done when the edges begin to pull away slightly from the sides of the pan and the top has characteristic cracks.
  7. Cool and Cut: Remove the pan from the oven and allow the brookie bars to cool completely in the pan. For clean cuts, use a sharp knife warmed under hot water and sliced dry. Cut into 18 bars and store wrapped tightly to keep fresh.

Notes

  • Use a sharp, hot knife to cut bars cleanly without crumbling.
  • Allow brookies to cool fully for best texture and easier slicing.
  • Store bars tightly wrapped at room temperature for up to 3 days or refrigerate for up to a week.
  • You can freeze individual bars wrapped well for up to 2 months; thaw before serving.
  • If you prefer a more fudgy brownie layer, reduce baking time slightly to avoid overbaking.
