Red Bean Sesame Balls (Jian Dui) are a traditional Asian deep-fried dessert made from glutinous rice flour dough filled with sweet red bean paste, coated with sesame seeds, and fried until golden and puffy. These chewy, crispy on the outside treats are perfect for a delightful snack or dessert.

Instructions
- Heat the Oil: Place a medium-sized pot on medium-low heat and fill it with enough oil for deep frying. Allow the oil to warm up gradually while preparing the dough and sesame balls.
- Prepare the Dough Mixture: In a large bowl, combine the glutinous rice flour, sugar, and salt. Slowly drizzle in the boiling hot water while stirring with chopsticks or a spoon. Initially, the dough may look dry but keep stirring until combined.
- Knead the Dough: Once the mixture cools enough to handle, knead the dough inside the bowl until smooth and all the flour is incorporated. Add a few more drops of hot water if the dough is too dry or a pinch of flour if too sticky. The dough should be smooth and elastic.
- Divide and Flatten the Dough: Divide the dough into 8 equal pieces. Keep the pieces not in use covered with a damp cloth to prevent drying. Flatten each piece into a 3-inch wide disk about ½ inch thick, making the center slightly thicker than the edges.
- Add Red Bean Filling: Place about 1 ½ teaspoons of red bean paste in the center of each dough disk. Carefully wrap the dough around the filling, ensuring no openings or thin spots to avoid bursting during frying. Roll each filled dough into a smooth ball.
- Coat with Sesame Seeds: Lightly brush or dip each ball in water, then roll them in raw sesame seeds until fully coated. Press gently to secure the seeds onto the dough surface.
- Deep Fry the Sesame Balls: When the oil is warm, carefully add a few balls at a time into the pot, ensuring not to overcrowd since they will double in size. Fry for about 10 to 15 minutes, occasionally stirring to prevent sticking. When they begin to float and expand, press them gently into the oil to help puff up. They are done when they turn evenly golden brown and stop expanding.
- Drain and Cool: Using a slotted spoon, remove the cooked sesame balls from the oil and place them on a wire rack or paper towel-lined plate. Let them cool for about 10 minutes before serving as they will be very hot inside.

- Make sure to seal the dough completely around the filling to avoid bursting during frying.
- Do not overcrowd the pan when frying to ensure even cooking and proper expansion.
- Use medium-low heat to slowly fry, allowing balls to cook through without burning.
- Adjust sweetness of the dough or filling according to your taste by increasing sugar or red bean paste.
- Be careful when handling hot oil and fried balls as they retain heat for a long time.
