  • Total Time: 35 minutes (including setting time)
  • Yield: Approximately 48 bite-sized pieces 1x

Description

This Raspberry Cheesecake Chocolate Bark combines creamy white chocolate tinted with a soft pink hue, infused with rich raspberry and cheesecake flavorings. Loaded with crunchy vanilla cookie gems and soft mini marshmallows, and topped with colorful sprinkles and edible glitter, this bark is a delightful treat perfect for gifting or celebrating special occasions.

Ingredients

Scale

Chocolate Base

  • 2 pounds White Candy Coating
  • Pink oil based Food Coloring (to desired shade)
  • 2 Tablespoons Paramount Crystals
  • 1/4 teaspoon Raspberry Super-Strength Flavoring
  • 1/4 teaspoon Cheesecake Super-Strength Flavoring

Add-ins & Toppings

  • 8 oz Vanilla Cookie Gems
  • 4 oz Soft Micro Mini Marshmallows
  • Sprinkles of your choice (e.g., pink hearts, mini hearts)
  • White edible glitter (such as jewel dust)

Instructions

  1. Melt the Chocolate: Start by melting the white candy coating in 30-second intervals, stirring thoroughly between each to ensure it melts evenly without scorching. Continue until the chocolate is completely fluid.
  2. Add Coloring: Once melted, gradually mix in the pink oil-based food coloring until you achieve the desired shade of pink.
  3. Mix in Flavorings: Stir in the raspberry and cheesecake super-strength flavorings fully to evenly distribute flavor throughout the chocolate.
  4. Adjust Consistency: If the chocolate thickens and becomes less fluid after adding flavorings, stir in two tablespoons of paramount crystals and continue melting in 30-second intervals until smooth and fluid again.
  5. Add Cookie Gems and Marshmallows: Fold the vanilla cookie gems and soft micro mini marshmallows into the melted chocolate, coating all pieces completely.
  6. Spread the Bark: Pour the mixture onto a parchment-lined half-sheet pan and use an angled or silicone spatula to spread it into an even, thick layer.
  7. Decorate with Sprinkles: While the chocolate is still wet, sprinkle your choice of sprinkles evenly across the surface, filling any empty spaces for a festive look.
  8. Set and Score: Let the bark set at room temperature for 15 minutes. When it is nearly set, use a dough cutter or knife to score the bark into manageable bite-sized pieces.
  9. Final Setting and Cutting: Allow the bark to finish setting for another 10 to 15 minutes. Then cut completely along the scored lines to separate the pieces.
  10. Add Edible Glitter: Finish by lightly spraying white edible glitter or jewel dust over the bark for a sparkling, elegant touch.
  11. Store Properly: Keep the bark stored in an airtight container for up to 2 weeks to maintain freshness and flavor.

Notes

  • Paramount crystals help maintain the smooth, fluid consistency of the chocolate after adding flavor oils.
  • Use only oil-based food coloring to avoid seizing the chocolate.
  • The bark sets best at room temperature; refrigeration may cause condensation and affect texture.
  • Be careful not to overheat the chocolate during melting to prevent scorching.
  • Ensure even spreading for uniform thickness and easy breaking into pieces.
