3 Milk Mixture:
- 14 oz Sweetened condensed milk
- 2/3 cup Evaporated milk
- 2/3 cup Whole milk
Cinnamon Whipped Cream:
- 2 cups Heavy cream (cold)
- 1/2 cup Powdered sugar
- 1 tsp Vanilla extract
- 1/2 tsp Cinnamon
Instructions
- Preheat the oven: Preheat the oven to 180°C (350°F) and line a 9×13-inch baking pan with parchment paper.
- Mix wet ingredients: In a large bowl, combine pumpkin puree, eggs, sour cream, pumpkin pie spice, cinnamon, oil, salt, vanilla extract, granulated sugar, and brown sugar.
- Add dry ingredients: Mix in flour, baking powder, and baking soda until just combined.
- Bake: Pour batter into the pan and bake for 30-40 minutes until a toothpick comes out clean.
- Prepare milk mixture: Mix sweetened condensed milk, evaporated milk, and whole milk in a bowl.
- Soak the cake: Poke holes in the cake and pour the milk mixture over. Refrigerate for 30 minutes.
- Make whipped cream: Whip heavy cream with cinnamon, powdered sugar, and vanilla extract until stiff peaks form.
- Top the cake: Spread the whipped cream over the cake, create swirls, and sprinkle with chopped pecans.
