Ingredients
Scale
Cupcakes
- 1 cup pumpkin puree (not pumpkin pie filling)
- 2 tablespoons molasses
- 2 tablespoons honey
- 1 large egg
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1 cup all purpose flour
Frosting
- 1 cup cold heavy whipping cream
- 1 tablespoon peanut butter
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Spray 6 cavities of a muffin pan with nonstick cooking spray to ensure easy cupcake removal and prevent sticking.
- Make the Batter: In a medium bowl, stir together pumpkin puree, molasses, honey, and the large egg until well combined. Add the baking powder, baking soda, cinnamon, and all-purpose flour. Mix thoroughly until the batter is smooth and uniform.
- Bake Cupcakes: Spoon approximately 1/4 cup of batter into each prepared muffin cup. Bake in the preheated oven for 14 to 16 minutes or until a toothpick inserted in the center comes out mostly clean. Once done, remove from oven and let cupcakes cool completely in the pan before frosting.
- Prepare Frosting: In a large mixing bowl, combine the cold heavy whipping cream and peanut butter. Using a hand mixer or stand mixer fitted with a whisk attachment, beat the mixture until stiff peaks form, creating a fluffy and creamy frosting.
- Frost the Pupcakes: Once the cupcakes have cooled completely, frost them as desired. For a decorative touch similar to the photos, use a pastry bag fitted with a 1M star tip to pipe swirls of frosting on top of each cupcake. Optionally, garnish with mini milk bone treats for an adorable finish.
- Storage: Store the frosted pupcakes in an airtight container at room temperature for up to 3 days or freeze them for up to one month to preserve freshness.

- Allow cupcakes to cool completely before frosting to prevent frosting from melting.
