Description

Delight in these moist and flavorful Pumpkin Donuts with a rich Brown Sugar Glaze, perfect for a cozy fall breakfast or snack. The combination of warm spices, pumpkin puree, and a sweet cinnamon-spiced glaze makes these donuts irresistibly delicious and easy to bake at home.

Ingredients

Scale

Dry Ingredients

  • 1 and 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 and 1/2 teaspoons ground cinnamon
  • 1 teaspoon pumpkin pie spice

Wet Ingredients

  • 1/2 cup vegetable oil
  • 3/4 cup brown sugar, packed
  • 2 large eggs
  • 1 cup canned pumpkin puree
  • 1/3 cup milk
  • 1 teaspoon pure vanilla extract

Brown Sugar Glaze

  • 3/4 cup brown sugar, packed
  • 1/4 cup milk
  • 1 tablespoon butter
  • 1/2 teaspoon pure vanilla extract
  • 1 and 1/2 cups powdered sugar
  • Pinch of salt

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Spray a donut pan with nonstick spray to ensure the donuts don’t stick. If you don’t have a donut pan, a muffin tin can be used as a substitute.
  2. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, kosher salt, ground cinnamon, and pumpkin pie spice until they are well combined.
  3. Combine Wet Ingredients: In a separate bowl, mix the vegetable oil, packed brown sugar, eggs, canned pumpkin puree, milk, and pure vanilla extract until the mixture is smooth and fully combined.
  4. Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry ingredients and gently fold them together. Mix only until just combined to avoid overworking the batter, which helps keep your donuts tender.
  5. Fill Donut Pan: Spoon the batter into the prepared donut pan cavities. Alternatively, place the batter into a ziplock bag, clip off a corner, and pipe the batter into the pan for easier and more uniform donut shapes.
  6. Bake Donuts: Bake the donuts in the preheated oven for about 10 minutes. Once baked, remove the pan from the oven and let the donuts cool in the pan for 2 minutes before transferring them to a wire rack to cool completely.
  7. Prepare Brown Sugar Glaze: In a medium saucepan over medium heat, combine the butter, packed brown sugar, and milk. Whisk continuously and bring the mixture to a slow simmer. Let it simmer for about 1 minute, then remove from heat. Stir in the pure vanilla extract and powdered sugar until smooth. If the glaze has lumps, return it to low heat while stirring until smooth.
  8. Glaze the Donuts: Place a wire rack over a baking sheet or parchment paper to catch any drips. Dip the top of each cooled donut into the brown sugar glaze, then place back on the rack to let the glaze set. If the glaze hardens, gently reheat it on low to soften before continuing to dip.
  9. Store the Donuts: Once the glaze has set, store the donuts in an airtight container. These donuts are best enjoyed fresh as they do not keep long.

Notes

  • If you don’t have a donut pan, muffin tins are a great alternative.
  • Don’t overmix the batter to keep the donuts light and tender.
  • Use canned pumpkin puree and not pumpkin pie filling, which contains added sugars and spices.
  • If glaze becomes thick or hard, gently warm it again to maintain a smooth dipping consistency.
  • Store donuts in an airtight container at room temperature for up to 2 days for best freshness.
  • For a dairy-free glaze, substitute butter and milk with plant-based alternatives.
  • For a spicier glaze, add a pinch of cinnamon or nutmeg to the powdered sugar while mixing.
