Description

Peeps Rice Krispie Squares are a colorful, festive twist on the classic crispy treat.   • 8 (1.38-ounce) PEEPS Rainbow Pops (4 colors of Peeps in each pop – pink, blue, green & yellow)
  • 2 cups mini marshmallows, divided into four ½-cup portions
  • ¾ cup salted butter, room temperature, divided into four 3-tablespoon portions
  • 2 teaspoons vanilla extract, divided into four ½-teaspoon portions
  • 8 cups Rice Krispies cereal, divided into four 2-cup portions

Instructions

  1. Prepare pan and ingredients: Spray a 9×13-inch baking pan with baking spray and set aside. Remove the Peeps from their lollipop sticks and separate them by color. Prepare four medium microwave-safe bowls to work quickly with each Peeps color batch.
  2. Melt marshmallows with Peeps and butter: In a medium microwave-safe bowl, combine ½ cup mini marshmallows, 3 tablespoons butter, and all 8 Peeps of one color. Microwave on high for 45 seconds to 1 minute. Add ½ teaspoon vanilla extract and stir until the mixture is smooth and well combined.
  3. Mix in cereal: Fold 2 cups Rice Krispies cereal into the melted marshmallow mixture until all cereal is coated evenly.
  4. Layer the first color: Transfer the mixture to the prepared baking dish and gently press into an even layer using your hands.
  5. Repeat layering: Repeat the melting, mixing, and layering process with the remaining Peeps colors (yellow, blue, and pink), stacking each colored layer on top of the last. Press down gently on the final layer to compact the treats.
  6. Chill to set: Place the baking dish into the refrigerator for 30 minutes to allow the Peeps Rice Krispie squares to cool and set completely.
  7. Serve: Once set, slice into squares and enjoy your colorful Peeps Rice Krispie treats.
