Instructions

  1. Prepare Yogurt Mixture: In a mixing bowl, combine the Greek yogurt, maple syrup, and peanut butter until the mixture is smooth and well blended.
  2. Shape Bites: Using a spoon, drop 12 dollops of the yogurt mixture onto a parchment-lined baking sheet. Spread each dollop slightly to resemble the size of a cookie. Sprinkle the tops evenly with roasted salted peanuts. Place the sheet in the freezer and let the bites freeze for 1 to 2 hours, or until they are firm and solid.
  3. Melt Chocolate: Place the dark chocolate chips and coconut oil into a microwave-safe bowl. Heat the mixture in 30-second intervals, stirring thoroughly each time, until the chocolate is melted completely and smooth.
  4. Dip Bites: Take the frozen yogurt bites out of the freezer. One by one, dip each bite into the melted chocolate, coating it fully with a smooth layer.
  5. Add Toppings: Immediately after dipping, sprinkle the coated bites with additional chopped peanuts and a small pinch of sea salt while the chocolate is still wet, to add texture and flavor.
  6. Final Freeze: Return the chocolate-coated bites to the parchment-lined baking sheet and freeze for at least 1 more hour, or until the chocolate is fully set and firm.
