Instructions

  1. Pulse Peanuts: Place the peanuts in a food processor and pulse just until they are broken down into fine crumbs.
  2. Form Dough: Add the dates, peanut butter, and vanilla extract to the food processor. Pulse again until the mixture forms a soft, sticky dough. Add the tablespoon of water if the mixture is too sticky to process smoothly. Continue pulsing and pressing the mixture until no large pieces remain and it sticks together as one ball.
  3. Shape Balls: Roll the dough into small balls using your hands. The dough may leave a slight oily residue but should stick together easily. Lay the balls on a plate or a baking sheet lined with parchment or wax paper, then refrigerate until ready for chocolate dipping.
  4. Melt Chocolate: Slowly melt the chocolate using a double boiler, oven set to low heat, or microwave in short bursts, stirring frequently to avoid burning.
