- Make Peanut Butter Mixture: In a large bowl, combine the creamy peanut butter, melted unsalted butter, confectioners sugar, and vanilla extract. Mix thoroughly until the mixture is well combined but crumbly in texture.
- Form Peanut Butter Balls: Using a small cookie scoop or tablespoon, portion out the peanut butter mixture and roll each portion into a smooth ball using your hands. Arrange the balls on the prepared parchment-lined cookie sheet. Chill them in the refrigerator for 30 minutes to firm up.
- Melt Chocolate Almond Bark: Place the chocolate almond bark in a medium microwave-safe bowl. Heat in 30-second intervals, stirring well after each until completely melted and smooth.
- Dip Buckeyes into Chocolate: Insert a toothpick into the top of each chilled peanut butter ball. Dip each ball into the melted chocolate, leaving a small circle at the top exposed to resemble a buckeye nut. Allow excess chocolate to drip off before placing the dipped buckets back onto the parchment paper. Optionally, smooth over the hole left by the toothpick with your finger.
- Set and Serve: Allow the chocolate coating to fully set at room temperature or chill briefly before serving or storing the buckeyes.
