Instructions

  1. Prepare Baking Sheet: Line a sheet pan with parchment paper to prevent the buckeyes from sticking during the chilling process.
  2. Make Peanut Butter Mixture: In a large bowl, combine the creamy peanut butter, melted unsalted butter, confectioners sugar, and vanilla extract. Mix thoroughly until the mixture is well combined but crumbly in texture.
  3. Form Peanut Butter Balls: Using a small cookie scoop or tablespoon, portion out the peanut butter mixture and roll each portion into a smooth ball using your hands. Arrange the balls on the prepared parchment-lined cookie sheet. Chill them in the refrigerator for 30 minutes to firm up.
  4. Melt Chocolate Almond Bark: Place the chocolate almond bark in a medium microwave-safe bowl. Heat in 30-second intervals, stirring well after each until completely melted and smooth.
  5. Dip Buckeyes into Chocolate: Insert a toothpick into the top of each chilled peanut butter ball. Dip each ball into the melted chocolate, leaving a small circle at the top exposed to resemble a buckeye nut. Allow excess chocolate to drip off before placing the dipped buckets back onto the parchment paper. Optionally, smooth over the hole left by the toothpick with your finger.
  6. Set and Serve: Allow the chocolate coating to fully set at room temperature or chill briefly before serving or storing the buckeyes.
