  • 1 tablespoon soy sauce (use tamari if gluten free)
  • 1 tablespoon maple syrup
  • 1 tablespoon seasoned rice wine vinegar
  • 1 teaspoon sriracha
  • 2 tablespoons grated ginger (about 1/2 inch ginger root)
  • 12 cloves garlic, minced

Instructions

  1. Preheat and prepare cabbage: Preheat your oven to 400 degrees Fahrenheit. Cut the cabbage into thick 1/2 inch slices and arrange them in a single layer on a baking sheet. Brush the top side with olive oil, then flip each slice and brush the other side as well to ensure even roasting.
  2. Roast the cabbage: Place the cabbage in the preheated oven and bake for 25-30 minutes, or until the cabbage slices are tender and golden brown around the edges, developing a delicious caramelized flavor.
  3. Make the tahini miso sauce: While the cabbage is roasting, combine the tahini, water, toasted sesame oil, soy sauce (or tamari), maple syrup, white miso, seasoned rice wine vinegar, sriracha, grated ginger, and minced garlic in a small mixing bowl. Whisk everything together thoroughly until the sauce is smooth and well blended.
  4. Serve: Once the cabbage is roasted, transfer to a serving plate and drizzle generously with the prepared tahini miso sauce. Garnish with sesame seeds and fresh parsley to add texture and color. Serve warm.
